Banana Baked Oats

These baked oats double as a perfect breakfast for slow cozy mornings or a quick and easy make-ahead option for busy mornings. They’re warm, flavorful, & maintain their oatmeal texture on the inside with a crisp outside. The key to making this recipe great is making sure your bananas are RIPE! This recipe is great for kids too because it’s easily modifiable. You can add berries, apples, seeds, or even chocolate chips! For more balance, use a protein-rich milk like soy or pea protein. This pairs well with coconut yogurt or savory turkey sausage.

INGREDIENTS:

  • 3 mashed bananas

  • 3 eggs

  • 1 1/2 cups of non-dairy milk (I’ve been using pea protein milk for the added protein)

  • 1 tsp vanilla extract

  • 2 Tbsp olive oil

  • 2 cups rolled oats

  • 1 tsp baking powder

  • 1 tsp cinnamon

HOW-TO:

  • Mix wet and dry ingredients separately in separate bowls, then combine them together and mix thoroughly. In a roughly 8x8 inch, parchment-lined baking dish, pour the mixture and spread evenly.

  • Bake at 350 degrees for 40 minutes.
