Rotisserie Chicken Fried Rice: 3 servings
Ingredients
1.5 cups cooked rice (day-old works best)
3/4 cup chopped rotisserie chicken
1/2 cup finely diced carrots
1 egg
1 tbsp butter or avocado oil
1–2 tsp low-sodium soy sauce (or more to taste)
Instructions
Heat butter or oil in a skillet over medium heat.
Add carrots and cook until very soft.
Add rice and chicken, stirring to warm through.
Push everything to the side. Crack egg into pan and scramble.
Stir egg into rice mixture.
Drizzle in soy sauce and mix well.
High-Protein Mac & Cheese with Broccoli: 3 servings
Ingredients
1 cup brown rice pasta
1 cup broccoli florets, chopped very small
1 cup milk
1/2 cup cottage cheese
3/4 cup shredded cheddar cheese
1 tbsp butter
Salt to taste
Instructions
Bring a pot of water to a boil. Add pasta and broccoli together.
Cook until pasta is tender and broccoli is very soft (about 8–10 minutes).
Drain and return to the pot.
Add butter, milk, and cottage cheese. Stir over low heat until warm.
Add cheddar and stir until melted.
Lightly salt to taste.
Sheet Pan Sausage, Potato & Bell Pepper: 3 servings
Ingredients
2 chicken sausages, sliced
1.5 cups potatoes, diced small
1/2 cup bell pepper, diced small
2 tbsp olive oil
Salt to taste
Instructions
Toss all ingredients.
Roast at 400°F for 30 minutes, flipping once.
Tuscan Chicken with Spinach (One Skillet): 2-3 servings
Ingredients
3/4 lb chicken thighs, diced
1 cup baby spinach, chopped
1/2 cup cream
1 tbsp olive oil
Salt to taste
Instructions
Cook chicken in oil until done.
Add cream and simmer 5 minutes.
Stir in spinach until wilted.
Add salt to taste.
Pair with a healthy carb like brown rice pasta or jasmine rice.
BBQ Chicken Sweet Potato Bake (Sheet Pan): 3 servings
Ingredients
2 cups sweet potatoes, diced small
3/4 lb chicken thighs, chopped
2 tbsp olive oil
2 tbsp mild BBQ sauce
Salt to taste
Instructions
Toss everything together on sheet pan.
Bake at 400°F for 25–30 minutes, stirring once.
Ground Turkey Meat Sauce (One Pot): 3 servings
Ingredients
3/4 lb ground turkey
1/2 cup finely diced zucchini
1/2 cup finely diced carrot
1 cup crushed tomatoes
1 tbsp olive oil
Salt to taste
Instructions
Brown turkey in oil.
Add veggies and cook until soft.
Stir in tomatoes.
Simmer 15–20 minutes.
Serve over brown rice pasta.
Taco Bake (One Skillet): 3-4 servings
Ingredients
3/4 lb ground beef
1/2 cup cooked rice
1/2 cup finely diced bell pepper
1/2 cup shredded cheddar
1 tbsp olive oil
1 tsp mild taco seasoning
Instructions
Brown beef in oil.
Stir in bell pepper, cook until soft.
Add rice and seasoning.
Top with cheese, cover until melted.
Alfredo Pasta with Cauliflower (One Pot): 2-3 servings
Ingredients
1 cup small pasta (gluten free)
1 cup cauliflower florets, chopped small
1/2 cup heavy cream or half-and-half
1/4 cup grated parmesan
1 tbsp butter
Salt to taste
Instructions
Boil pasta and cauliflower together until very soft.
Drain, return to pot.
Stir in butter, cream, parmesan
Add salt to taste.
Simple Beef Stew (Crockpot or Pot): 3-4 servings
Ingredients
3/4 lb stew beef, cut small
1 cup potatoes, diced small
1/2 cup carrots, diced small
1/2 cup beef broth
1 tbsp olive oil
Salt to taste
Instructions
Crockpot: Add all ingredients, cook low 6–7 hours.
Stovetop: Brown beef in oil, add remaining ingredients and simmer 60–90 minutes.
Chicken Soup (One Pot): 3-4 servings
Ingredients
1 tbsp olive oil
1 small carrot, finely diced
1 celery stalk, finely diced
1/4 small onion, finely diced
3/4 lb chicken thighs or breasts, diced small
4 cups low-sodium chicken broth
1/2 cup small pasta or white rice
Salt to taste
Instructions
Heat oil in pot. Sauté carrot, celery, and onion until soft.
Add chicken and cook until just opaque.
Add broth and pasta/rice.
Simmer 12–15 minutes until everything is very soft.
Lightly salt to taste.
