Baked Blueberry Pancakes

Since having kids, cooking anything over a stove is incredibly inconvenient - and that includes pancakes. Oven pancakes are the perfect solution because they’re hands off, you can make a huge portion and save it, and it’s easily customizable with different toppings. This recipe pairs really well with a creamy coconut yogurt or eggs. The recipe itself isn’t overly sweet, so topping with raw honey or pure maple syrup is a must!

INGREDIENTS:

  • 1 cup oat flour

  • 1 tsp baking powder

  • 2 eggs

  • 1/2 cup pea protein or other non-dairy milk (I use this for the extra protein)

  • 1 tsp vanilla extract

  • 2 Tbsp raw honey

  • 1 cup fresh or frozen blueberries

HOW-TO:

  • In separate bowls, mix wet and dry ingredients thoroughly, then combine the wet and dry ingredients into one bowl and mix well.

  • Transfer the mixture into a parchment-lined roughly 8x8 baking dish and spread evenly.

  • Bake at 400 degrees for 20 minutes. Enjoy with your favorite pancake toppings.
